What it is
A staple food crop. The futures contract is for potatoes grown in north-west Europe for processing into chips and crisps; most potatoes everywhere are sold under contract or in local markets.
How it is usually quoted
Euros per 100 kilograms.
This is the customary unit of the reference market. Other markets for the same commodity may use another unit or currency, and an exchange can change a contract’s terms: its own rulebook is the authority.

EEX, settled in cash against an index of European prices.

China and India grow the most. The contract reflects Belgium, the Netherlands, Germany and France.
